Kanonkop Kadette Cape Blend is a barrel-aged red wine made by the Kanonkop winery with the Cabernet Sauvignon, Cabernet Franc, Merlot and Pinotage red varieties in the South African Coastal Region (Cape Town).
Kanonkop Kadette Cape Blend comes from old vines over
65 years old. They are cultivated as shrub vines; a traditional practice
that is used to make the most of the sunlight and regulate growth. They
also use the most innovative techniques to guarantee the optimum levels
of sugar, acid and PH throughout the entire life cycle. The whole
process is carefully monitored and culminates in harvesting at the
optimum point of ripeness.
When the Kanonkop Kadette Cape Blend
grape reaches the winery, it is vinified following the ancient
tradition of being placed into open concrete tanks at a controlled
temperature of between 28 and 30oC. It macerates there with
skins for 3 to 7 days to get the best extraction. Finally, the wine ages
for 12-14 months in 225-litre French oak barrels being used for the
second and third year.
