TASTING NOTES
We use a combination of botanicals from our home, as well as from around the world, to bring you the freshest, most complex flavours in your spirits. Sloe and hawthorn berries bring you big, juicy sour cherry flavours, alongside distinctively dry notes. Juniper berries bring in an elegant and refreshing bitterness, as well as woody notes of cedar and sandalwood. The bright, tropical zest in our gin comes from our Douglas fir needles; clean sour notes come from our blackcurrant leaves, and bog myrtle is wonderfully savoury with almost bubble-gum notes. Finally, bay leaves, cloves and black pepper offer up a spicy finish with every sip. We reign in these big flavours with fresh Amalfi lemon peel, blackcurrants, coriander seeds, fennel seeds, orris root, liquorice and angelica root.

From our own backyard we harvest green juniper berries for an elegant and refreshing green bitterness, as well as woody notes of cedar and sandalwood. The bright, tropical zest in our gin comes from our Douglas fir needles; clean sour notes come from our blackcurrant leaves, and bog myrtle is wonderfully savoury with almost bubble-gum notes. Finally, lovage brings a complex savouriness that cross celery and curry leaves. To balance out the rich characteristics of our Hepple botanicals, we also include fresh Amalfi lemon peel, ripe Macedonian juniper berries, blackcurrants, coriander seeds, fennel seeds, orris root, liquorice and angelica root.
